BAKED GARLIC POTATOES
1 1/2 - 2 pounds large red or white potatoes (about 1 1/2 inches
long)
4 to 5 cloves fresh garlic, minced
4 tbls olive oil
1/4 cup chopped fresh parsley
2 tsp. salt
1/4 tsp fresh ground pepper
- Wash & dry potatoes. Arrange in a casserole, keeping potatoes in no more than two
layers.
- Combine garlic, oil, parsley, salt and pepper.
- Pour over potatoes and toss to coat with oil mixture.
- Bake covered in a 450-degree oven for 20 minutes.
- Turn potatoes to re-coat in oil, then bake another 25 minutes.
- Cut potatoes open and squeeze ends to fluff them up.
