WASHINGTON APPLE CAKE
CAKE
3 eggs

cups sugar
1 cup oil
2
cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon salt
1
teaspoon vanilla
1 cup walnuts or pecans
4 cups red apples sliced thin (about 5 apples)
- Beat eggs until light. Combine sugar and oil. Pour sugar/oil mixture into beaten eggs
and mix on medium speed. Stir together dry ingredients and combine with egg/sugar/oil
mixture. Add vanilla and beat to mix.
- Fold in nuts. (batter will be thick)
- Spread apples on the bottom of a 9 x 13 dish. (Grease or butter bottom of dish if preferred)
- Pour batter over apples. Let stand for 10 minutes or so while thick batter works down into apples evenly.
- Bake @ 350 for 40 minutes
- Cool for at least 1 hour before spreading icing.
ICING
(is you would like more frosting double the ingredients below)
6 oz. package of cream cheese
1/4 cup melted butter (half stick)
2 cups powdered sugar
1
teaspoon lemon juice
- Beat softened cream cheese until fluffy. Beat in melted butter then the powdered sugar.
Add lemon juice.
- Spread over cooled cake and refrigerate.
Makes 12-15 servings
